should i replace the grass and just make the gound level or get like gravel to level the ground because currently my greenhouse is slanted and my plants fell down and almost died.

Both. Get rid of the grass and use gravel to level and keep it level as the ground will settle.

Best way to level a greenhouse...bulldozer would work well, but if it's a small one then a skidsteer might work okay.
