I read somewhere that you should let the flower grow and then nip it before it blooms b/c the stalk still does photosynthesis and can contribute energy. And that cutting it before it develops harms the plant more than good. Anyone know the right way?

While that is true that the stalk will photosynthesize, the energy used to create the stalk, the flower, the ovary, the stamen, the pistil, the stigma, the anther, the pollen, and the seeds far outweighs any energy that the stalk itself will produce through photosynthesis.
Unless you want seeds, cut it and try for strikes.

Thank you! I thought that as well. It was really small so I snipped it twice.

If you take the cut stalk and put it in the media it may grow new babies.
It's generally suggested you cut the stalk as low as possible at about two or three inches tall, then stick the cut end about one inch deep into the media. If it strikes, those babies will grow much more quickly than those from seed.
