Any suggestions for easier to care for orchids with nice foliage? I know many jewel orchids do as well as some paphs. Also, if your in the US, any suggestions on where to buy them would be greatly appreciated.

Some of the common vandas are great! So are dendrobiums and Brassavola nodes. I find them very easy to care for, and nodosa grows especially rapidly.

I got mine at lowes for about 5-7 dollars. You could most certainly find them at nurseries as well that specialize in tropical plants.
