At what point should I pot these guys up? Should I cut off the old leaf when I do?

Not yet. And I'd leave the leaf, the plantlets are drawing nutrients from it. Once it turns brown it can be pulled off.

Or I could be completely wrong, which I suspect I may be because I just got a dislike.

Not wrong! I suspect that someone has too many thumbs 😂. I leave them attached until they are totally brown and crispy and detach easily (unless they get moldy first, which can happen since I use a covered tray, but then I just try to snip off the moldy part)
I use a tray with a peat-sand-other grit mix so I have somewhere to stick my tags so I don’t mix up my pullings, but it’s not necessarily any better than any other method out there.

Ah, thanks for that. I was doubting myself because I don't have much experience besides "leaf fell off while removing dead leaves/ flowers, toss it into the same pot and see what happens".

You, on the other hand... Well, I've gotten some great Pings from you so I'd listen.

no problem for your ping
the Mexican pings are currently dormant so greatly reduce watering or do not water them at all, leave them in a bright room at 12-15°c
dormancy period 'in situ' from mid October to mid May
'Some people lay two layers of wet paper towel in a Tupperware container, lay the pullings in there, and put the cover on too' this is my method of leaf cutting, it avoids a lot of problems
