Sorry they look so ratty, but they will pick up. If you aren't already, you may want to bag it for a week or so until the roots have a chance to establish themselves. With the right light they will get that orangeish color.

The stuff in the first pic and some in the last does look like mold. In the last, on the plant to the right, it's just the Filiformis fluff. Whatever ya call it.

As long as it is hanging out on the moss and not the plants, it should be okay. If it becomes a problem You can soak mosquito bits in water and then use that to water the plants.

When I unbag the plant, do I need to do it slowly?

When you unbag the plant, it's better to do it in stages.
Once a week, poke two holes in the bag, this will get it used to lower and lower humidity. After about four to six weeks, you should be able to lose the bag altogether.

That's actually the opposite of what you should do if you're trying to keep humidity up.
Relative humidity is affected by temperature. The lower the temperature (nighttime), the higher the relative humidity. Higher temp (daytime), lower RH.
