Still waiting on a flower... It's sending up a second stalk- should I clip it or will seed yield still be the same without doing so

Awesome! I can't really answer your questions about the seeds; I'm not that experienced in that aspect of the field, but I do want to compliment you! I've never risen a Drosera from seed before, and you grew this one from the very beginning. Awesome!

You could clip it though, and use it to make cuttings.
Be sure to keep feeding it if you want lots of seed...
Is there any reason for it looking like it's dying? Still nice muscilage, just kinda lost color

Yes! I do know the answer to this question at least!

The plant has devoted all its energy into flowering and setting seed. Without much energy for the leaves, the plant looks more banged up. Don't worry, this happens to almost every plant that flowers. This is especially noticeable in Drosera and VFTs. Don't worry, the plant will recover after all the seeds are gone and the stalk dies. Some growers prefer to cut off the stalk as soon as they come up to keep the plant looking nice, but you don't want to do that because you want to get seed.

With proper care, sundews shouldn't degrade in health even if they flower. More light almost always the answer. If you want prolific growth and a lot of seeds, you gotta feed em'.
